Ingredients
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1/2 cup sugar & 2 tablespoon sugar (keep them separate!)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup Lowfat Plain La Yogurt Probiotic
- 1/4 cup canola oil
- 1 teaspoon vanilla
- 1 1/2 cups diced fruit (we like pineapple!)
- 1/4 cup pecans (chop them up!)
The perfect accompaniment to your morning cup of coffee
Directions
- 1
Get your oven warmed up to 350 degrees
- 2
In a bowl, mix together the dry ingredients – whole wheat flour, all-purpose flour, baking powder, baking soda, sugar (only 1/2 cup!), and salt
- 3
Grab another bowl and mix together the wet ingredients – egg, La Yogurt Probiotic, vanilla, and oil
- 4
Slowly add the dry ingredients until combined. Then, toss in the fruit and gently fold it together
- 5
Prepare an 8-inch square pan with cooking spray and then pour the batter into the pan
- 6
In a little bowl, sweeten up the pecans by mixing them with 2 tablespoons of sugar
- 7
Sprinkle the pecan/sugar mixture over the batter in the pan
- 8
Bake about 50 minutes – the top should be golden brown
- 9
Once it’s cool, cut into squares and enjoy!
- 10
Top off your pieces with a slice of fresh fruit!
