Fruity Coffee Cake

Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup sugar & 2 tablespoon sugar (keep them separate!)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup Lowfat Plain La Yogurt Probiotic
  • 1/4 cup canola oil
  • 1 teaspoon vanilla
  • 1 1/2 cups diced fruit (we like pineapple!)
  • 1/4 cup pecans (chop them up!)

    Get your oven warmed up to 350 degrees

    In a bowl, mix together the dry ingredients – whole wheat flour, all-purpose flour, baking powder, baking soda, sugar (only 1/2 cup!), and salt
  • 3
    Grab another bowl and mix together the wet ingredients – egg, La Yogurt Probiotic, vanilla, and oil
  • 4
    Slowly add the dry ingredients until combined. Then, toss in the fruit and gently fold it together

    Prepare an 8-inch square pan with cooking spray and then pour the batter into the pan

    In a little bowl, sweeten up the pecans by mixing them with 2 tablespoons of sugar

    Sprinkle the pecan/sugar mixture over the batter in the pan

    Bake about 50 minutes – the top should be golden brown

    Once it’s cool, cut into squares and enjoy!

    Top off your pieces with a slice of fresh fruit!
